iPhone audio issue

Bit of a weird one, it seems anyway. I've got an iPhone 6, I don't regularly use the analogue audio out - occasionally with headphones and sometimes connected to a little T-amp at home with no problem.

I've just bought a car where I have to use the aux in (until I replace it with a carplay head unit) for audio, previously was using A2DP - again with no issues.

It will work fine to start with but will randomly drop the audio quality mid way through. It sounds like a much lower bitrate, that sort of quality drop. It originally started doing it on spotify so I assumed it was just a bad signal, but it's doing it on locally stored music and podcasts too. Pausing then playing will sort it for a few seconds, restarting the app normally buys me a few minutes of decent quality audio and rebooting the phone can get me a couple of days before it starts doing it again.

It's driving me nuts - has anyone experienced anything like this before?
