Is there any speed difference between 1TB NVME & 2TB NVME? (Gen 3)

Generally speaking 2TB drives are a little faster than 1TB drives due to memory channels/chip density etc. Realistically you wouldn't really notice it though.
 
I concur with the above, you're unlikely to notice with a 1TB drive. The issues are usually with lower capacities and they primarily impact write speeds rather than read speeds.

For TLC, the consensus is that you're best off with 0.5TB (or higher) and for QLC 1TB (or higher). 1TB pretty much avoids the worst of it, for any drive. DRAM can also mitigate the impact somewhat, I think, as can how the chips are selected to meet the capacity.
