well all of the cables are covered in black plastic

if thats what you mean ?

And if so...what should I do please....leave it as it is or just remove the cable itself as it's probably not going to be used anyway ?

I meant electrically sheilded. Usually use thin bare wire that's wrapped around the main insulated signal cables to reduce electronic noise. The cable itself should be fine, if your worried about it and its not going to be used wrap some electrical tape around it for peace of mind.

It looks like they have used screened cabled ans not trimmed the strands far enough back when applying the heat-shrink.
