To put say 2x250gb 16mb cache WD's in raid 0 AND have a 36gig raptor on the same controller to have windows or whatever on it?

Probably, depends on the controller. I've got 2x120GB raid 0 and 1x300GB on my silicon image controller all working fine with windows on the 300GB

give it a go as long as there is no data you can't stand to loose

I dont have any sata hdd's yet but i would prefer to know if it was possible.To get a fast 500gb drive and have windows on a fast seperate drive to prevent loosing ALL my data if i get a failure etc.

Its on the onboard controller on my dfi sli-d so the nvidia one?
