My batter is made and resting in the fridge until this evening.

Pancakes are great, I like them done the traditional way on pancake day, thin with sugar and lemon juice.

Got pancakes?
 
I'll be making some tonight when I'm back from the office. I have mine savoury (shredded chicken with a leek, mushroom and cheese sauce) with one, maybe two sweet ones for dessert.
 
Lemon and sugar. If it's the thick fluffy stack type I don't mind maple and pecans.
None of that Nutella nonsense.
 
Is there a benefit letting the batter chill in the fridge? Other than timesaving anyway.

They're lighter and fluffier if you let the batter rest. There is some technical reason for it but I can't remember exactly what.
