iTunes - Moving to a new PC

Couple of questions here, although I think I already know the answer.

Moving from an XP to 7 machine. Touch is synced to the XP machine.

I've installed iTunes on the new machine, however upon connecting my iPod I can't see any of the music on it nor can I sync it back to the new machine.

It's the same with apps - I've found where they are stored and copied them across to the new machine, but iTunes fails to pick them up.

Finally do the files stored on the PC include all the save data from the apps (game save files etc) or are they just the installers?!
 
You can't go from device>computer only computer>device. You'll need to drag everything into iTunes.

One way of doing this pretty completely is to change your library location to pme both machines can access like an external drive or map a drive letter to a folder on both machines, then consolidate your library to there. Copy everything to the new one, select that library by launching iTunes with CTRL pressed and it'll be exactly the same on the new one. You can then change location and consolidate again if needed.
