Not a big fan of Jedi Outcast myself - I played it a couple of years ago and wrote quite a long critque on here which has long since been purged but some of you may remember.
I think the main problems for me were that the levels are very bland and boring, particularly in the early stages of the game. Graphically it looks quite dated (see CoD for an example of how good the quake3 engine can look) and it also has a lot of incredibly annoying platform sections. Basically it turns into a quicksave fest in a couple of places which gets really dull and frustrating. Didn't think much of the silly translation puzzle thingys either - Star Trek: Elite Force 2 had fun minigames instead! Then there's the whole randomly running about spending half an hour figuring out which way you need to go - this is the 21st century guys, I'm not playing Quake anymore and expect some kind of guide/compass/map or whatever!
Yes, things do brighten up a little once you get the lightsabre, but that's quite late into the game. It does also get a little boring/repetitive after a while too, once you've already sliced 50 baddies in half (the boss fights are cool, however).
Jedi Academy on the other hand I did enjoy. It's a nicely refined version of the game, missing out a lot of the boring stuff and also given the player a bit of freedom in terms of mission choice, force powers and weapons loadout. Less emphasis on jumping around on silly platforms floating in the air for no apparent reason, and more on the combat/development side of things.
As for the Dark Forces games, the only one I played was a demo of Mysteries of the Sith. Looked very bland to me at the time.
