The quality and layout of keyboards varies a lot between notebook manufacturers. Some prefer almost flat keys whilst others go for more raised ones. It's down to personal preference really so if possible, fire them up and give the keys a good beating!
As for the screen. Primarily look for dead pixels or if you can't test them then check for dead manufactuer's dead pixel policy (usually 3 or more dead/stuck before they will do anything about it). "Gloss" type screens won't be much good if you're going to be using the notebook outside a lot. However, the upside of these types of screen are that colours can appear richer and blacks will actually be nice and inky.
