One of my neighbours has been building a kit plane in his garage for the last 3 years. TBH i dont think he'll ever finish it and he seems like a very intelligent person.

How hard is it really to build these kit cars/planes/helicopters? I'd much rather have a helicopter (like an A600 talon). They say you can build it in about 500 hours but of course they will say it's easy because they sell them.

On a scale of 1 to 10, 1 being "I can build a PC", 10 being "I have PHD in engineering", how hard do you reckon it would be?

Pfffft I know phd engineers who would struggle with a meccano set aimed at kids

A guy on some program on a lesser free view channel built a plane and it all looked do able except the very last steps where an aviation expert came in to do some calibration and tests

Very very very hard.
The guys who do it are geniuses for sure, kit cars are not too bad but once you try making something fly then anything can happen.

Check out "A Chopper is Born"
You'll need a lot of space and time and the ability to follow instructions.
Plus you need a lot of money to learn to fly as well!

ive build an rc helicopter from kid before and theres no way i would dare try a full size one as even a basic rc heli has to be setup exectly right to fly properly and stable.

a plane is fairly simple though and you can pretty much check everything works without take off
