Kitchen Knives

The time has come for me to buy some decent knives for my kitchen. I've been using a cheap set from Ikea for over a year now and they have never been brilliant. Only problem is, I don't know what to buy.

Can anyone recommend me a decent set of knives that won't cost the earth please.
 
Almost all of mine are stellar and they have been very good - they are not cheap but not mega price either. I actually topped up my collection very inexpensively from Tk maxx too. I hava a couple of globals and they are better than the stellars.

although saying that i've had a set of Swan Proffesional ones (set of 5) for nearly 4 years now and they have been great full stainless with weighted handles and only cost around £45

Go to a shop like Steamer Trading if you can so that you can hold the knife before you buy it. For home Stellar Sabatier or Victorinox are a great choice, hard wearing and a good price, you'll want a Chefs/Cooks knife, bread knife and a paring knife, all of these will cost around £50-60. I don't think you'll need a set as these three knives can do most tasks, along with a good sharpening steel.

i went to France for the day, and spend £70 on a set of knives, 2 paring knives, 1 large chefs knife, and a small chefs knife. absolutely suberb, considering they are just carre four own brand ones.
 
get yourself some globals, not the cheapest but superb, had some for more than 10 years and they're a bit smaller than when they started but still top notch!
do you really need a set of knives? i'd buy two or three really good ones rather than 5+ average ones...
 
Echo what has been said Kasumi/Global then Stellar. However the Stellar are a great knife for the money, my friend got one and it's an awesome knife. Perfect weight and size. I am in the market for one, I am chef'ing here, and I'd happily buy any of those three brands. I am tempted to go for a Global as I found a really nice one.

I think i'd be happy with just 2 of those kasumi knives and their diamond and ceramic sharpening tool

but just looked at pricing of the folded steel hand made ones and they almost made my eyes water the 20cm chefs knife is £125 quid then the knife block to hold 6 of the most popular blades is another £200 quid

just worked out to replace my swan set with these would cost nearly a grand :eek:

Yeah I would go for them without a doubt, just depends on funds and what I can get around here. My other mate has a Kasumi, very very nice knife. We're all chefs haha.
 
I've got a set of Henkels and a set of Füri, the Füri wins hands down, the quality if the blades are first class. They seem to need very little sharpening.
 
As said get down a shop and try them as they all feel different and really depends on what you like, all the major brands are great.

^ Agreed. The good brands are much of a muchness. Our knives are Global; we bought some, had some as wedding gifts etc and we really like them. Have a try of some different brands and see what you like :)

All those expensive knives everyone is shoving at you are useless unless you know how to sharpen them properly or are willing to send them off to be sharpened by a professional, If you dont know how to sharpen properly, just buy a £30 set off the internet.

Or learn how to sharpen? It's not rocket science, just requires a bit of practise and an idea of what edge you want.
It is for the average man who hasnt the time or the inclination to learn, to be honest the easiest option for most people is use a friendly butchers or send them off once a year. How often do most people use knifes, when was the last time your average joe portioned a chicken, most people use knives to cut vegetables or chop a bit of meat up.

Definitely agree, I've got a fairly decent knife sharpener, occasionally I'll take it to work and get them all pretty sharp. We also keep a sharpening steel at work and everyone gives it big licks trying to give the knives a razor edge, after a few days you could ride bare arse on it.
