Kitchen Knives

Budget is £100-150 quid, any suggestions welcome.
Do make time to look at the Robert Welch Signature range, should you be able to.

I personally don't get on with them, but I can certainly appreciate their quality and I know lots of people who are huge fans of the range. I don't think they can be beaten in their price-bracket and I'd urge you to give them a shot in amongst some of the other brands that have been recommended.

Realistically how many knives do you use?
As many as you truly feel comfortable using.

I've got a set of seven and I pretty much use at least five of them on a regular basis, with four of them being in action on a daily basis. The sixth and seventh are going to be swapped out for blades I'll find more of a use for, when I find the time.

I do go along with the 'chef knife and utility knife' approach but there are plenty of uses for other styles of blades, providing you get on with them sufficiently to warrant using them and not relying on the same blade for all tasks.

Personally I'd want a small paring knife, a small utility knife, a flexible filleting/boning knife, a serrated-edged knife, a deep-bladed chef's knife, a chopper/cleaver and a bread knife.
 
sorry for slight thread hijack but does anyone know of anywhere to sell used Global knives, i know eBay used to let you sell them but they have all now been removed.

I have a set of globals and have a Global G49 chinese chopper that i have used a handful of times that cost about £150.

OT, i would reccomend getting a small set of top quality knives and building the set over time, you may find a perfect chefs knife that will eat up most of your budget but will do for 80%+ of your tasks.

if you get a good set they will last you most if not all of your life so its not somthing to go for a budget version of

I have 2 sets (1 Global and 1 Shun) consisting of a chefs knife, a 6" blade and a small paring knife, these do me for every task (i also have a pretty much unused chinese chopper and a small 4" global knife that was on offer for £20 so i wasnt going to turn it down) as a personal preference i will always pick up the Shun over the Global as the handles seem more suited to me but at the first time of looking the Globals were by far the best and i happened to come across Shun knives on offer when i was on a weekend away in london.
 
I'm not sure what the members market here says about the sale of knives, might be worth pinging a mod as if they were allowed they would certainly sell.

I have just started cooking Chinese meals for me and the OH and I am weighing up on of these (the recipe book recommends having one)

Would one from a Chinese supermarket suffice?

best knife i ever had, use it for everything

not sure why people are saying you need 6 knifes ?

1 x chefs knife
1 x bread knife
1 x paring knife
and if you in to boning and special meat chopping then maybe one or two more

but for everyday use a chefs knife does it all
