KVM for a Mac Mini + supported # monitors

I'm taking on a new multiplatform development project therefore I'm contemplating a new Mac.

I'm going to grab a Mac Mini instead of an iMac because I want another U2410 (=> will total 3 x U2410's in portrait) [=>in a similar cost range as iMac [mini+u2410]]. Currently I run gentoo as a default setup on an antique, will be upgrading to SB-E in the coming months.

Having read about KVM's I'm very confused! I'm not interested in switching keyboards because I will have dedicated KB and mouse for each. So will be very happy with a dedicated monitor only KVM.

What is your experience with Mac and KVM, I would like a KVM which supports a resolution of 1200x1920 (not 1920x1200), reasonably priced and without any fuss, i.e. need to reboot etc... for Mac to detect etc... I prefer this rather than to touch the monitor to change inputs.

The Mac Mini looks like having 3 ports (thunderbolt, miniDVI and HDMI) can all three ports be used to stretch a desktop across three monitors? or is the maximum 2.

Question [2] isn't really important as I will probably only have one monitor running Mac, just curious.
