Left over Lamb

Hi guys,

Cooked a nice half shoulder of lamb last night for dinner, but I've got a lot of left overs, so I've put them in the fridge.

Thinking of having a lamb curry, something nice and quick. But I've never reheated lamb before.

I'm thinking of just emptying a jar of tikka masala and then dumping the meat in the frying pan and simmering until piping hot.

Should that ensure that the meat is good to eat taste and texture wise ? Or is there a preferred method of heating it up ?
 
Yeah that should be fine, I normally chop it up fry it off until you get some nice cripsy bits and then have with with salad and yogurt and mint sauce on wraps or in pitta for a lamb kebab.

That ^ is exactly what I do with left over lamb leg and shoulder. Great way to use up leftovers. Often better than the original meal :o.
 
Makes a good wrap filling too. Fry with some onions a little oil a a little left over gravy and a dab of mint sauce and boil off some of the water in the frying pan. Leaves you a nice sticky tangy chunks of lamb. Serve inside a wrap or pitta with some cous sous or rice or slaw or salad and some dressing or dip. Easy meal.
In fact I did this just the other night with some left over rib of beef but rather than mint sauce a few drops of balsamic to add the tangy. Had humous, lettuce, rice and sour cream and wrapped into a burrito. Top left over meal.

Curry is also good try using a paste add your leftover gravy maybe some chick peas.

Using the gravy, assuming it's a good one not a Bisto, is a real flavour enhancer you've got lots of lamby taste waiting to be used.
 
My favourite thing to do with leftover lamb is to cut it, heat it up gently in oil with any leftover veggie bits, garlic spring onions if you have any and then add cold rice (leftover rice which is a bit dryer works best). When it's all nice and hot crack a few eggs and go to town with a spatula and make a fried rice.
