Not much, Nvidia say they have tighter control of their version of adaptive sync but in reality there's practically no difference in performance, G-Sync Ultimate is their last push to try and stay relevant in this specific market when it really doesn't do much else different than VRR already does on its own.
 
I've now decided that I'm actually mainly gaming on my LG OLED and only need a computer monitor for office/content creation (and occasionally MSFS2020), so I've settled on the 34WN780-B with ergonomic stand for £440 instead.
These OP gaming monitors are wasted on me if I only play story-driven single-player stuff such as Cyberpunk in 4K ray tracing max settings that doesn't go above 60 fps anyway.

Scratch that, I saw the 34GN850-B on our 'Vindaloo' high-street tech store for £799 last night and pulled the trigger. £744 with Hosho discount. Today it's gone back up to £949 again LOL.
If the 34GP950 is around £1200-£1300, I don't think the HDR 600 and 180 Hz or G-Sync ultimate justify around £500 difference. Oh, and we won't be able to buy it anyway with the demand vs availability.
