Hey guys I'm not too sure if you can help me clarify this question before I pull the plug. I was wondering if this unit will be able to just run all three as JBOD instead of raided configurations.

I don't think it will. I'm not a fan of the way they deal with the data and how they explain it in the manual. I'd get a cheap NAS which would offer far more flexibility.
