An update for anyone who's interested.
The two buildings are now linked, and the throughput is hovering around 60-70 Mbit/sec.
Down from ~80 Mbit/sec when they were all configured within the same room - but certainly very good given what it's use will be.
Now, I just need to sort out the LAN-to-LAN VPN on the DrayTek 2820's at either end, and get this end to communicate with the LAN via the SBS2003 server we've got here (the router this end can ping any device on the remote network, so that's good)
