Hi.
As a faff around, i wouldnt mind getting a Linux based mail server working in a VM here on my PC.
I'd like to be able to access said mail in the mail server from a web gui remotely as well.

Will that work? +suggestions.

Yes. There are plenty of howtos.
Something called the perfect howto website or something.

In the past I have used Debian + Exim + bind + +spam assasin + courier imap + squirrelmail. It's relatively easy if you follow the guides and take your time.
 
I also did something similar with exim and squirrelmail a few years back.
Just google for howtos as above post says.
 
For something a little more 'pro', especially on the web interface side of things.. Check out Scalix.

It's pitched as an 'MS Exchange killer' But there is a community edition with web mail/web calendar etc which is almost as powerful as a full desktop e-mail app.

And it's a peice of P**S to install.

Im trying to get Ubuntu working in a VM, but the display of it is all messed up.
So for the moment im a bit stuck! :(.
