think question now is, is this a stepping stone, and how long do you plan on using this as 1080p only..is there a likely upgrade to 1440p?
my gut is rather than go for a agpu like 6600, which you may grow out of if wanting to upgrade, is still go for a 7800XT, and checked one other site and they have the pulse above for £504...checked last sale of game code and it was £30, so can know that down to £474. Gpu uses 250W while gaming(rechpowerup test of pulse) with spike of 308w...the 3100 is a 65wtdp, so well below maxing out the 500w psu
the 6800xt at 100% put the 3080 at 99%(in other words slightly faster but basically the same), except in raytracing where the 3080 wins
below is a 3080 paired with a ryzen 3100 at 4k...so gaming at 1080p wont be a problem. the cpu will be a bottleneck, but your fps will still crush your existing setup, and if you upgrade to more modern setup, you know the gpu will be be more than capable, so one thing you wont need to upgrade
I wouldn't bother with 32gb ram either.16gb is more than enough..I've yet to go over 16gb while gaming..just close down chrome etc before starting..it's nice having the extra, but not needed. watched a vid recently from guy runs a pc company is Australia, talking about ram etc..he basically says when selling a pc and buyer wants 4 sticks, he'll buy a 4 stick matching set rather than 2 sets of 2 sticks. Although the 4 sticks cost a lot more, they're guaranteed to work, which isn't the case with buying another set of ram and sticking them in. can lead to problems and crashed. says, seeing as he has to give a waranty on his pc, he wont sell it..get the ram you need when you buy it, don't add..if you want to add, swap the lot for more, that's why he recommends 32 for futureproffing, but seeing as existing, keep what you've got.
Later down the line, maybe look at a cpu upgrade, but, as a 5800X owner with a 3080 at home myself, I wouln't be spending £200 on one now. i bought mine back in mar2020 for £270..I wouldn't be paying £200 now. the 7600x for £199 knocks it to dust for gaming, as that's ona par with the 5800x3d, and that was down at £250 for BF...wouldn't touch that at £300..might as well get the 7600x and b650tuf board for £150..not that much diff in cost, except the ram addition, but selling old rig will cover that

I'd keep cpu, see how it is..then get 2nd hand 5600x for £80/£90 if you want to upgrade a bit more
am5 been out for awhile now and prices come down to a point that spend too much, might as well go whole hog and upgrade everything, as think some am4 cpu's too expensive
