I'm looking at upgrading my current rig to be capable of 1440p gaming at high settings and RGB-ify it. My current spec is as follows:

CPU: Ryzen 5 3600XT
Cooler: Dark Rock Pro 4
Mobo: Aorus Ultra Gaming X470
RAM: 16GB Team-Group NightHawk 3200mhz RGB
GPU: Gigabyte 1060 6GB
PSU: Corsair RM1000
Case: Phanteks Enthoo Evolve ATX

I have a basic M.2 that is getting replaced too...

I'm looking at getting the Lian-Li O11 Dynamic, along with a nice 360mm AIO (Either the GALAHAD or Artic Cooling II), also an RTX 3070, and another 16GB of RAM.

Would that "new" setup be capable of the highest settings in games at 1440p, games like World of Warcraft, Cyberpunk, Witcher 3, etc etc.

And also, I'd like to hit the RGB and get a theme going, I don't mind having to buy a new board for this but would prefer not too. I've not really looked into the RGB world per-se as it's confusing. What RGB fans/strips etc would pair with my CURRENT board? Failing that, what is a good equal performing board that I take the RGB factor up-to 11 with?

All you need right now is a new high-end GPU. Good luck with that right now. Next year - after the BIOS / AGESA updates - you can get a Ryzen 59xx. Your motherboard has an RGB header and assorted LED strip headers on it already.

Board specification said:
2 x digital LED strip headers
2 x digital LED strip power select jumpers
1 x CPU cooler LED strip/RGB LED strip header
1 x RGB (RGBW) LED strip header

I can get a 3070 or a 6800, no issues on that, I even have a 5600X if I want one, but I don't know if that's a worthy upgrade as I only got the 3600XT a month or so ago...

To be honest the only thing you really need is a better GPU and moving to a NVME.

Extra RAM probably won't make any difference, you could get some higher speed RAM but I've had good luck getting most 3200 kits up to around 3600 with ease.
