Built this system back in 2012 and used mainly for gaming and a little photo editing. Feel its starting to struggle a little with some modern titles and having to drop quality down a lot to maintain good FPS. Only used at 1080p but may move up to 1440 in future. Was looking at maybe upgrading GPU to a 1070/1080 and upgrade CPU if i really need to.

Any suggestions / Advice greatly appreciated.

No need for a new CPU as you've got decent clock so the addition of a 1070 or 1080 would do the job; gaming at 1440.

If you could afford it I would buy the 1080 as recent price drops have made them great bang for buck and would give you a better overall performance on ULTRA settings at 1440p (I've seen a Zotac 1080 for as little as £390 - and Overclockers have their deals, Easters coming). Plus, a 1080 would fit into a future upgrade nicely if you choose to upgrade sooner rather than later.

(I've got a 1070 in a clocked 2500K, playing games at 1440p, and am more than satisfied for the time being play most things on ULTRA and have great FPS. Totally, revitalised my system)

Yes, your CPU will be slight bottleneck but you will be none the wiser when comparing performance to your old card - it will feel like a new system when playing games.

EDIT: At the moment AMD don't have a card to match the 1070 or 1080 - and with recent price drops of 1070s or 1080s I wouldn't consider the RX 480 - if you have the money - as the 1070/1080 will give far greater performance at 1440p. If you were only gaming at 1080p then it would be different matter - but I would still be pushing you towards the 1070, if funds weren't an issue...
