looking to educate my girlfriend with classic films, but need ideas!

That was my first thought when classic films was mentioned but since I haven't seen them mentioned I'll also throw Bullitt, Point Blank (not Grosse Point Blank although that is also good if not a classic), The Hustler and Heat.

If she hasn't seen these comedy gems then it might be worth a watch as well - Airplane, Dragnet, Blues Brothers and Ghostbusters. :)
 
Not many 'classics' in the lists so far!! ;)

Garden State, High Fidelity - I doubt even in 30 years people will be calling these classics!

Have you got any to throw into the mix then? I'd agree that some of the films probably won't last given continued scrutiny as they are very much a product of their time but you might as well suggest something better. :)

Incidentally I'd also add On The Waterfront to my earlier recommendations.
