Lorne/Square Sausage

Ingredients:
2 lbs Ground/minced Beef
2 lbs Ground Pork
3 Cups Fine Bread Crumbs
2 tsp Pepper
2 tsp Nutmeg
3 tsp Coriander
3 tsp Salt
1 Cup of water.

Method:
The beef and pork should not be too lean or the sausage may be too dry.
Mix really well by hand then place in an oblong pan about 10" x 4" x 3". You might need two pans. Place in the freezer for a little while till it's just starting to set. Remove it and cut them to the thicknes you like and put them into freezer bags and put them back in the freezer. When required, defrost and fry in a little fat or oil until brown and cooked through.

seriously you could make them in the time it takes you to drive to the local 'stockist'
 
Yeah, I was after a local ish stockist. Our local Tesco stores don't sell it, although the Heck one is listed on the Waitrose site, so I'll maybe have a look in there at some point.

I'm aware that there are a myriad of mail order options, but the delivery costs on such a low price item are quite expensive, unless you order a lot.

I have the above recipe already bookmarked, but if I do go down the route of making my own, I'll also look at other recipes. Looks like it could be quite pricey to make if I go for preground meat (£4 for 1kg beef mince £3.34 for 1 kg pork mince) but I must say I do enjoy making stuff.

Edit - actually, not that pricey - just under £4 per kilo to make my own! I might be able to get that lower by grinding the meat myself!!
 
Our local butcher noticed that my wife is Scottish and asked if she'd like to have some made up for her, perhaps yours would do the same?
 
Well, I made my own today - followed this recipe:

1lb / 450g Minced Beef (hamburger meat)
1lb / 450g Sausage Meat
6oz / 170g Fresh Breadcrumbs
4 fl oz / 115ml water
1½ tsp Salt
1½ tsp Coriander
1 tsp Pepper (more if you prefer it spicier)
½ tsp Nutmeg

Used Tesco 20% fat mince and bought some shoulder steaks to mince up as their pork mince was 5% fat -.- I used less salt too - only 1 tsp.



Better break this bad boy out:



Cut and medium ground the pork




Made some breadcrumbs




Added the beef mince, spices, water and breadcrumbs



After a good mix



Fired it into a lined loaf tin



After freezing for a while to firm up I took it out and sliced it up





Greaseproof paper between slices ready to go back in the freezer



Not tried it yet, but cooked pics to follow. It smells really good. I got 16 slices from this recipe, with a total weight of 1.333kg. Cost for this are:

£2 beef mince @ 20% fat
£2.85 pork shoulder
Water - free
Breadcrumbs - free, had some in the freezer
Spices - pepper coriander nutmeg and salt - no idea.
Cost p/k "ish" say £5 per kilo? Price per slice is about 32p ish excluding breadcrumbs and spices.
