Low and Slow BBQ Brisket

This looks phenomenal! If anyone lives near Manchester or Chester and wants a BBQ fix then head to hickory smokehouse in Chester or Southern 11 in Manchester. Both are superb but of the two, Southern 11 edges it.

Have to disagree on Hickorys. I thought their food was way to over sauced totally obliterated the taste of the meat and the ribs were overdone. Plenty of people cooking better Q at home IMHO.

Back to the Op - looks great. I thought you trimmed off too much fat from the brisket but looks like it came out really well.
 
How do you keep the barbecue that hot for that long? It doesn't look very big. You got a charcoal starter?

You must have had a bad chef that day. Ours was fine with sauce on side like in USA BBQ joints...
 
Same thing on two occasions. Pulled pork with BBQ sauce mixed throughout. Brisket drowning in the stuff, likewise ribs. Not a bad meal by any stretch but certainly not my idea of great Q
 
Have only ever slow roasted Brisket in various sauces (Texan BBQ was interesting to say the least), but this looks amazing! Will have to give this a try at some point.

My stomach sounds angry after looking through those pictures. *looks at watching hoping it's soon time for dinner*
