Hi,

I am fed up with Wilko's sandwiches for my lunch with a few other bits. costing me/us between £2.50 and £5.00 a day if my wife also has our lunch from there.

Finding time at home isn't the easiest and tbh, there's only so much you can do with basic salads and pasta salads.

Anyone any recommendations for something healthy, tasty, doesn't take very long to make and isn't overly expensive?

Links to recipe's gratefully received :)

Salads, there is an infinite variety not "only so much you can do". Otherwise any kind of soup, stew, curry will reheat nicely if you have a microwave.

I see you're near Stoke, over the Winter months I take Lobby with me for lunch and heat it up in the microwave. Also, keeping the Stoke theme going I also take cheesy oatcakes and a pot of Reggae Reggae Sauce to dip them in.

I alternate between pesto pasta and cous cousin. In each, chuck a load of diced peppers, olives, bit of onion, cherry tomatoes, plus sweet corn in the pasta.cous cous you eat cold, pesto pasta I'd fine either cold or microwaved.

Edit: I make two lunches-worth each time as they keep fine in he fridge just in those plastic take away containers (and have wednesdays off, so it works out perfectly)

Big pot of chilli con carne.
Some big tortillas.
Put chilli and cheese in tortillas and fold in to burritos.
Wrap in foil, put in plastic bags and freeze for future use.

Get some pesto or chilli jam [or similar relishes] - they liven up any sandwich.

Take leftover dinner into work... cook extra if there aren't enough leftovers! If you've got chicken or veg leftover either mix with couscous or quinoa or make it into wraps.

this or bulk cook something once a week and put in tupperware for the week.
you can even get the glass lunche boxes so if you make say a Sheppards pie you can just snap the lid on, take it to work and throw it in the microwave.

or cook a ton of chicken thighs on the Sunday, prepare some veg and portion out. then change the dressing up each day.
