Luxury spa hotels

I'm after your reccomendations for a really nice spa hotel for a nice relaxing long weekend sometime soon. The catch being that we have a 4-month-old daughter who we'd like to take with us.

With her being so young it doesn't really fall into the 'child-friendly' category so no need for play areas & creches, most big places will offer a baby listening service and will be pretty baby friendly (or rather, not anti-baby).

What I'm after is somewhere with a good spa/spa-type treatments, beautiful surroundings and excellent dining. we're on the sussex coast so somewhere in the south-east would be good too.

Any ideas?
 
Ashdown Park looks very nice indeed, thanks. I should've learned to play golf ages ago, then I could take proper advantage.

I'll drop them both a line, see if they fit the bill baby wise.
 
If you're willing to trek to Ireland, Capella Castlemartyr is a new hotel set up by the group of the former CEO of Ritz Carlton and the spa looks amazing, a glass building which looks so pretty at night. I've not been there but it's been getting very good reviews.
