Mac Documents - drive association

In order to give me some form of data security I want to do what I do on windows (sorry to speak blasphemy in here ) and that is have my documents (folder) on a seperate drive/partition but still associated with the Documents 'folder' in Finder.

Is this possible, if so how?

Create an "Alias" which is the equivalent of a shortcut - I think this might be what you want to do, create the alias and then pop that on your desktop or where ever you wish!

Can you not just change where the 'Documents' option actually refers to?

It is possible, but you need to set up symbolic links
