Maccy's first cooking thread - Fish Cakes!

Time for me to join the ranks of the budding chefs on OcUK and add my simple but effective recipe for others to try!
Now I'm by far no match for the likes of Jonny69/similar but here goes!

For this, you will need -


  • ~200g of fresh fish, more if you like them fishy, less if you don't. I bought some Smoked Haddock from Asda's fish counter and it was lovely, cost about £2 which wasn't bad.
  • 1 egg
  • ~75ml milk for egg, small extra amount for the fish
  • Small amount of butter
  • Some flour, have to use your own judgement for this later
  • 4 slices of bread
  • ~800g of potatoes
My measurements are only rough guides as it depends on how large you like your fish cakes or how many you want to make.

  1. Boil the potatoes, then mash them - adding only salt & pepper. Adding butter & milk will result in the fish cakes becoming sloppy and falling apart when cooking later!
  2. Whilst the potatoes are boiling, take the 4 pieces of bread and break them up into small bits. Afterwards, put them in a blender (may have to do this in a few times) until they're nice and small as shown in Figure 1.
  3. Next, take your chosen fish, cut in half and fry in a small frying pan with a small drop of cooking oil and some milk. Place some butter on top of each slice of fish (Fig. 2) and a some pepper if desired. Cook for no more than 2 minutes on a low heat!
  4. Beat the egg with the 75ml of milk and arrange the breadcrumbs, egg & milk mixture and flour as shown in Figure 3.
  5. By now, the fish and potatoes should be ready. Mash the potatoes with some salt and pepper and any other spices/herbs if desired. Cut up the fish into small pieces and add to the mash potato, mixing in with a fork (don't mash in the fish!).
  6. Here's the first messy bit! Use your hands to make small balls out of the fish/mash mixture, about the size of a small orange depending on how many you are making (Fig. 4).
  7. Now, going back to the flour/egg/breadcrumb arrangement, dip each fish-mash ball into the flour, followed by the egg, and then the breadcrumbs. Make sure that the egg is completely covered in breadcrumbs! Flatten out the fish cakes as shown in Figure 5.
  8. Stick them in a hot, large frying pan with lots of oil so that they don't burn and cook for a minute or so until brown (Fig. 6).
  9. Serve with a side salad and any sauce that you choose! I picked some mayonnaise and some sweet chili sauce which was perfect (Fig. 7)!
Hope you enjoy it, I made 8 good sized fish cakes from the amount of ingredients, but they were a good size.

Those look like mighty fine fish cakes and I am now very hungry!!!
Guess its me 10 for a quid from Sainsburys!

They may smell and taste vaguely of fish but I'd hate to guess which bits of what fish went into 'em.


Thanks to the OP, might do these myself sometime.
 
I made some last week. Almost identical recipe, although I didn't use any milk with the eggs for the breadcrumbs. I found a little bit of mustard set them off nicely.

I only made them because I happened to have the ingredients - some frozen fish that I never seemed to get round to eating. Likely I'll just buy supermarket ones in the future.

I finished mine in a frying pan as well. How are they in the oven?
 
Can't say I'd thought about doing them in the oven so can't say. I'd guess they'd need a bit longer and reckon you wouldn't get as nice a crisp outer coating.
 
They look really nice, I bet they are infinitely better than bought ones (and you know what goes in them). To go with mine I normally get some mayonnaise add chopped capers, chopped gherkins, a squeeze of lemon juice and a little bit of mustard.
