Machine is currently running Ubuntu 7.10, what's the easiest way to upgrade to 8?

You could reinstall and start over from scratch. If you like you can also use the incremental upgrade tool. WHen you start up the update manager there should be a button at the top telling you that 8.04 is available. Click it and have it guide you through the upgrade.

Back up your home folder just in case something goes awry.

When it's done and you've rebooted and such run
sudo apt-get install xubuntu-desktop
to install Xubuntu
 
Awesome, sounds like I don't have to burn any ISO's or suchlike.

Now to make it harder, is it possible to do this over VNC? I'm around 10 miles from the machine you see, but I have VNC access (i'm using x11, so I can access the login screen).
 
if you have an external drive i'd say use something like partimage and back up the system partition then try the incremental upgrade.

it's easy to put back with partimage if something goes wrong or you don't like hardy
