I'm pretty sure that the number you end up with should always be a multiple of 9 and therefore all numbers that are a multiple of 9 would have the same symbol.
 
It's always going to be the same difference.

12
1 + 2 = 3
12 - 3 = 9

13
1 + 3 = 4
13 - 4 = 9

EDIT - hang on a sec. I just did 76 and it was different, yet it still did it correctly. Unless it changes the symbols each time... The answer was 63, which is a multiple of 9... they must change the symbols each time.

EDIT - yes they do. Each multiple of 9 is the same, albeit it it alternates each time you run the program.

Not very well, i've tried twice and it was wrong both times.

Then you are doing it wrong :p hehe.

There are only so many numbers between 1 and 100 that can be reached with that formula. Each of those numbers has the same symbol in the grid, the symbol changes each time to make it look smarter than it is.
 
lol I din't even need to use any numbers, just look 0 9 18 etc all the multiples of 9 always have the same symbol.
