Mail security issue?

I've changed one of my email accounts passwords today, however I've just noticed that I haven't needed to alter the password on my iPhone 4S (5.0.1) to receive new mail? My MacBook prevents access unless I change it though.

I've also noticed that if I delete the password on the account and try re-entering the old passwords again it will fail the verification BUT if I save and exit I can still send and receive emails using the account.

Any ideas? Or am I going wrong somewhere...

Is your mail setup manually or do you sync the accounts via iTunes or iCloud?
