What's the point?
I assume it's rice based, can't imagine cabbage being expensive in china.
Looks like rice water anyway which they use in a lot of stuff that sets up when heated.

No, it's normally a form of wax and it's not usually edible. It's quite a common thing to see on Japanese variety programs where they get celebs to do it along with all other types of food.

The point? It's done because restaurants have realistic models of their dishes in the windows so you can see what they sell. This is how they make lettuce for those displays.

Not knowing Korean to read the subtitles on the video I would possibly question whether the person who posted it to facebook originally knew what it was ...

Reading this thread has not improved my quality of life. Sorry but I can not endorse fake cabbage documentary.
