Just before Christmas, Aldi had this Hot Honey in the middle bit

It was awesome but we've ran out. They sell it online, but before i buy more i'm now wondering if i should just make my own. All recipes i see are for making it for short term use and whilst i've done this in the past, it generally solidifies once it cools down rather than staying nice and runny.

Anyone made this before and got any tips on retaining liquidity. Maybe it's just the type of honey we've used? Generally we buy from a local beekeeper, but maybe should buy something a little more processed for this purpose?

I got this expensive stuff, after a few weeks it turned like this....

Weird, the local stuff we've bought has solidified. Although now i'm thinking about it, i'm not sure the current jar actually IS the local stuff. Might be some supermarket one my mother in law bought when we finished ours

It's perfectly normal for good quality honey to crystallise...in fact pure good quality honey is more likely to than fake or adulterated honey.

To the OP can't you just mix some chilli sauce with honey?

Probably could, but i've a supply of dried chillis and am happy making my own infused oils etc so this just seems another step. I'm going to just try with normal honey and see how it goes

Like the usual fads, salted caramel, dubai chocolate etc
Salted caramel has been around for years though, I think the Dubai chocolate fad has already faded away.

I did make some of my own last year at some point, IIRC the recipe was just honey, apple cider vinegar and then chili flakes. I seem to remember it was fine, but didn't have any sort of bottle to put it in (not that it lasted long anyway). I should make some more, but as with all things - it's easier and less faff to just buy it.

Just tried making some with what I had to hand in the vacuum chamber.

Cheap supermarket honey, few finger chilli's and splash of apple cider vinegar

I've poured it into a chefs bottle and will see how it looks after a week.
