Making your own soup, ideas?

I guess Minestrone is getting a bit like Blue Nun & Black Forest Gateaux but try and make it yourself and it can be a hearty meal. Made a huge pan this morning. Fills the boys up after football & plenty left to freeze. Today's very large pan cost around £6.00 to make and there will be plenty to use for the coming weeks.

Very very easy to make and a pleasure to eat. I used to go by a recipe but made it so many times it comes as second nature now

* Sweat off 2 Onions, 3 Carrots and 2 sticks of celery (all diced) in some Olive Oil and Garlic for 10 minutes on a low heat
* Add some cubed Panceta, I prefer smoked. Cook for a further 10 minutes or so
* Add three packs of Tesco(Or equivalent) Passatta and Basil
* 1 tin of the following, Borloti Beans and Cannellini Beans
* Your own measure of small pasta.
* Add about a pint of water
* Season well and and add some chopped fresh Basil

Tastes amazing

Sweet-potato, butternut squash and carrot.
It not only makes a lovely colour, but add a splash of chilli sauce and it's spicy as well.
