Migrate from RAID1 to single SSD

So, right now I have a pair of hard drives within an Intel RAID1 mirror. If I wanted to move to an SSD, what's the best way to go about this without reinstalling?

As I understand it, it's preferable to run a single SSD on AHCI mode, but changing that requires changing a couple of things within Windows in order to boot.

What's the best way to actually migrate the data and then ensure the new disc is bootable?

I suppose I could add the SSD to the present mirror, allow the mirror to rebuild on it and then break the mirror?

i don't know if this is possible as not had much dealings with raid but why not image the drive, change the settings to ACHI and disconnect one of the SSD's and then if it doesn't work\boot you can restore the image to a single SSD

I have not done this in a while but I used Acronis (Macrium reflect is a free option) to image my RAID 0 array to a singe mechanical hard drive. As your setup in RAID it should be ok to change AHCI mode without issue.
