Just needing a very simple answer, have got just over a kilo of mince that goes off today thinking of bolognessing the whole lot, how long in the fridge would it last if i do this?
 
if you keep it in the fridge, after it's cooked, maybe 3/4 days, freeze it and it'll last a damn sight longer
 
You could also make a shepherds pie out of it, then freeze it. It'll be fine for a week or so, just make sure you reheated it thoroughly!

Meaning you think itll last longer than that?

Somethings last well pass their use by date. However meat generally doesn't maybe a day or two. You can see and smell when it's off.

Just cook it all up. Make a few different dishes and freeze it. That way it will last for years. Fry mince up with onions. Then separate it into different dishes. Or once cooked it will easily last 5 days in the fridge.

no fresh produce flicks a switch from being fine and healthy one day to rancid and death inducing the next,
its a gradual process of decay that starts the minute the animal / vegetable is slaughtered / harvested and ends with it rotting.
supermarkets et al will apply an arbitrary date to when it goes off which will in all likelihood be on the safe side.
meet will tend to be a finer line than fruit or veg, but can still check by looking at, feeling and smelling your food.,

smell foods, check for discoloration or feel, dont bin stuff just because a packet says its gone off.
