mince pie trays

One thing I've found with silicone trays is that it's harder to get the pastry crunchy on the bottom. Has anyone found a workaround for this?

I do have cast iron baking stones in the oven too but I guess with the silicone trays I've been a bit paranoid about heating them up quite as much as normal. I should probably just try that.

I've always found that with silicon.

As for tray, any muffin or Yorkshire put tray if fine and you want them deep.
