The Mk3 works on pressure sensors in the seats to determine what is on the seat. The generation2 system can supposedly detect a child seat due to the way in which the seat distributes weight.

There are 2 generations of the system in the Mk3 though. The first generation cannot detect seats very well.

Would I trust either system to be faultless when it came down to my childs life? No chance.

Ford may be able to deactivate or remove the airbag but I am unsure on this.

I would keep the child in the back of the car. If he/she drops something then it will distract your attention from the road whilst you picked it up. This could result in the airbags going off... to put it nicely.

According to the technical info, the dealer can fit a kit to disable the airbag for you, but there is no way to turn it off yourself.

The older Mk3's had an occupancy sensor in the passenger seat, but that won't detect child seats. Later cars don't have them.
