I'd have been tempted to create a single cable for use with the SATA.
Wouldn't have been that difficult to buy a cheap VGA cable (15 pins), and chop the ends off the SATA (5-pins each) combining them into one cable. Buy a VGA connector from the high-street electronics shop and place that on the rear of the Xbox case, then solder back to individual SATA inside the Xbox case.
Could also get a 12v DC power supply, a PicoPSU, and have the whole thing powered from a single 12v DC plug rather than have to run back to the PSU.
