Monitor to match up to a 1080Ti

I probably don't really want to go past the price point those 27" G-sync monitors are at. £700-ish?

Ideally you should be looking at the high-refresh rate 4K monitors but they aren't out yet. The 1080 Ti will max many if not most older games at 4K 60Hz. You might look at the 3440x1440 high refresh rate monitors.
