Most ethical work?

Invent an efficient long-term solution to mankind's demand for energy by tapping a sustainable power source.

Whoever does that will become a virtual god.
 
Helping wild animals is in some ways more virtuous than helping humans because there's a 0% chance of direct thanks or acknowledgment.
 
For me it would be working at an animal rescue centre, a naturalist (Sir David Attenborough/Nick Baker), or working with handicapped people.

I'd agree with this, helping humanity as a whole is far, far more important than helping individuals.

To be honest though, you have to do what you find rewarding and ethical, as everyone will aspire to meet different criteria for it. Take a look at what people have posted here, see what catches your eye.
 
Ethics are a pretty personal thing, what one person may think as ethical, another may not. If you're really interested in looking for an ethical job it has to be one that suits your ethics and not just what other people believe to be ethical.
And to add to this you'll constantly be accused of being a hypocrite. I do a green job and I'm always being told 'ugh if you were so green you'd be driving a Prius instead of that old car' or why aren't I riding a bike etc etc.

If you're so ethical [up on your high horse] why have you got a computer when so many people are starving? Did you just throw that food away, waste that petrol, plastic bag, you've got the luxury of worrying about animals, don't tell me not to cut this tree down when I can't afford to keep my family warm etc etc etc. Warning: you've got all this coming :D
