If you're going to be using a Sandy Bridge CPU then faster than 1600MHz RAM doesn't make a whole lot of difference:

If you're going to be using Ivy Bridge then I've not seen much testing yet on the difference faster RAM makes.

One here comparing 1600MHz to 2400MHz: Review: G.Skill TridentX DDR3-2,400 Ivy Bridge memory

It's fairly limited testing but it doesn't show much of a performance gain with 2400MHz.

If you stick to 1600MHz then how about 2 kits of this: Corsair Vengeance Low Profile 8GB (2x4GB) DDR3 PC3-12800C9 1600MHz Dual Channel Kit £39.95 each

Ivy Bridge I would go Asus M5G over Sabretooth if Overclocking is important to you and you dont need additional slots on the board. The Samsung RAM suggested above does work well on this board with Ivy CPU. Clocks well if your a memory overclocker.
