More specifically Nvidia Surround and AMD eyefinity.
I'm planning on building a PC and I'll have 2 monitors, (possibly a 3rd in future). I have no intention on gaming on more than 1 screen even if I do get a 3rd screen, and I want the other screens to be fully usable and not locked due to having a game running.

What I want to know is if either of these software have any useful features for non gaming multi monitor setups? I've been looking around the web and all I can find is information to gaming setups.

If the game doesn't support 'full screen windowed mode' by default, which lets you game on your middle monitor & still use the side screens without having to alt-tab, then have a read through this :

I've seen 'Borderless Gaming' mentioned more than the others on forums, so it might be the best one to start with.

Or you could just run the game in windowed mode.
 
display fusion pro. Great for me as well as good wallpaper support for dual monitors.

About gaming tho etc, just make sure ur main screen is setup to be the main one for the card check ports perhaps see which is primary n1. Second game in windowed fullscreen that way u can move ur mouse over to either spare screen for whatever, u can get tools like display fusion pro which has a keybind to lock the mouse to a screen if u dont want the mouse to move out of game monitor.

Not necessarily related to using games with 3 monitors, but UltraMon is a great tool to use if you wish to have taskbars on all of your individual monitors instead of tabs piled up on one of them. Display Fusion Pro as mentioned above is also great, and makes dual/triple background displays incredibly easy.
 
Tempted to go with Display Fusion pro, especially with it's lifetime license. Any free alternatives that allow Different backgrounds and multiple task bars?
