Hi,
I would like to know if my current set-up will allow me to use three monitors for flight simulation; see here:
http://www.fsinsider.com/product/learning/Documents/Using Multiple Monitors.pdf

What I want to know is; is it possible and how to do this on my rig? Or do I need to start buying more graphics cards or upgrade other stuff?

GeIL 2GB (2x1GB) PC2-6400C4 800MHz Ultra Low Latency DDR2 Dual Channel Kit (GX22GB6400UDC)
GeForce 8800 GT 512MB
Intel Core 2 Duo E2180 "LGA775 Conroe" 2.00GHz (800FSB) - Retail (overclocked)
Gigabyte GA-P35-DS3L Intel P35 (Socket 775) PCI-Express DDR2 Motherboard
Be Quiet! Straight Power 650W ATX2.2 SLi
Windows XP

Yes its simple (but not as cheap as it first looks :(

Now I copied this from a review site

The standard Radeon HD 5870 can drive three outputs simultaneously: any combination of the DVI and HDMI ports for up to 2 monitors, and a DisplayPort output independent of DVI/HDMI.

What it means is that ONE of the three monitors MUST be a display port input. The other two are fine, So you will need some homework :)
