Hi all, I have always been really really keen on eating mushrooms at every opportunity with most of weekly meals.

I usually fry them a dash of soy and paprika from my experimenting and I just use regular mushrooms.

I'm keen to try more types and more ways of cooking them, at one of my local restaurants they serve a field mushroom burger with aioli and i'm told they boil the field mushroom with a wedge of lemon? does this sound something normal or am I having my leg twisted.
 
My view on the culinary arts is to try everything. Try boiling them with a wedge of lemon, I never have, but that's not to say it won't turn out well. If it doesn't, you lost the price of a packet of mushrooms and half a lemon...

The personally, I stick to J-FRO's method of sauteing them in butter with garlic. Each to their own I suppose.
 
Would the lemon not be some sort of preservative for the colour or something like that? It is hard to think that a lemon wedge will add much flavour to a pan of boiling water + mushrooms?

Treat the mushrooms to prevent discoloration.
Mushrooms that are going to be steamed will retain a better color if they are given an anti-darkening treatment first. To do this, dip the prepared mushrooms for 5 minutes in a solution containing 1 teaspoon lemon juice or 1 1/2 teaspoons of citric acid mixed into a pint of water.

What about those big Portobello mushrooms? What do u lot do with em?

I tend to pull the centre stem out and then stuff it with a garlic breadcrumb filling.

Just get some panco or normal breadcrumbs, add enough melted better to moisten and then add about 2 finely chopped cloves of garlic. Add some parsley, salt and pepper and then stuff the mushrooms.

I'd put them in a really hot oven for 20 minutes. Put some cheese on top for the last 5 minutes to make it a main part of a meal.
 
I tend to just fry them with some balsamic vinegar. Although thats usually for the wife as i don't really like them!
