Half-Life 2 (well it makes me jump)
Doom 3
Condemned (not played it but ive read about it)

If you prefer first-person shooters that are just about shooting everyone and everything:

Battlefield 2
FEAR
Call of Duty 2

GTA Vice City
City of Heroes/City of Villains (you can get both COH deluxe and COV collectors edition in a bundle for 25 quid on gameplay).

If you want a game that will really scare the living daylights out of you, try Thief: The Dark Project.

Other must have games that haven't been mentioned yet include:

X-Wing
System Shock
Sim City 2000
Conflict: Freespace
Thief 2
 
Knights of the Old Republic, its the only game i could quite easily play back to back. Just never ages in enjoyment factor.
