Should i start with a total coolant system flush/re-build, then clean the engine up and see what happens?
When i say i saw water in the oil, i took the oil cap off (after it had been sat for a few days) and there was a bit of clear fluid settled on the metal part of the cap.
Nothing to worry about if that is the only concern, in this weather a bit of condensation in the engine is normal.
I would sort the leak, flush the system and run it on water and go for a decent drive around, if all is ok then drop the water and stick the correct coolant in.
I did the exact same thing once after fitted a head a few years ago, temp was rising + no heat from heaters, I drove to the cinema and as i got into carapark the temp shot into the red. I parked the car and watch T3 thinking that I had done the HG wrong

The fact yours didn't go into the red is a good thing. I had a pipe split on my car once from the water pump, no water was getting to the sensor so the temp was Normal. Only realised there was a problem when the engine cut out at 90mph on the M1 due to it running dry
