worth getting rid of 2 x 6950s modded to 6970 to get one of these bad boys?

Another one considering it, but will wait 3-4 months until prices mature and both teams have laid all of their cards on the table.

i wonder how would two 7850's compare to a single 680?

See the benchmarks on toms, 6990 = 2 x 7850/6950 give or take. It would probably out perform a single 680, but not by a huge margin at all, but then of-course you have crossfire to deal with.

Any benches up of 7970 CF vs GTX680 SLI?

Don't use driversweeper, just uninstall the cards correctly.
Driver cleaning tools... *shudder*
They haven't been needed since the days of XP.

What sort of performance increase did we get across the board from 6970 > 7970?

Everytime I've 'uninstalled the drivers for my 6990's traces are l;eft behind that driver sweeper picks up. I didn't use it once a couple of months ago and the new instal was buggy and kept CTDing so I'd use driver sweeper if I were you.
