Profiles do make setup easier, especially for a new builder, but yes, can be worked around easy enough, and as you say most MBs will have a 'safe' setup for ram it can't read.
My biggest concern is compatibility as in, no boot, or won't load OS, and such. This will put a damper on your day. I have had a few of those days, so I will always choose QVL first, unless I have done my own testing, or at least known someone who did, which I havne't and don't.
Now granted, maybe I'm off base here as I haven't built in a few years, so I'll ask. Are there some new developments in RAM compatibilty since say the I7 9XX days?
