Need a new knife

Hey,

I'm after a new knife that will essentially be all purpose. I currently only have a pretty average 9cm Sabatier Stellar that I somehow use for everything...

I've skimmed this thread: http://forums.overclockers.co.uk/showthread.php?t=18382614 but i'm still pretty clueless.

Can anyone recommend something decent that will fit the bill for all standard meat/fish/veg prep. Not even sure what size to get really, would this 11" Global fit the bill? Or maybe 20cm would be better?

Guess I should get a sharpener as well, but don't really want to spend more than £80-90 total.

Global are nice knives (i have several) for your needs the 20cm g2 is pretty good all purpose knife although handles are personal preference so try before you buy.

However, if you are willing to jump up slightly to the the ~ £100 price bracket i could heartily recommend http://japanesechefsknife.com/HDSeries.html 21cm Gyuto. In my opinion these are much better knifes for the money, harder steel, brilliant build quality, lovely to use and beautiful to look at. FYI and without going into too much detail the Hattori's are equivalent or slightly better than Tojiro knives but cost less as they are not a heavily marketed brand. I bought the 27cm Gyuto from that site and it makes everything feel effortless . far superior to my Globals. That site also has several other Japanease brands that are arguably better than Global and cost less but the Hattori knives are very very good. FYI dollar conversion worked out at 1.6 and delivery took 4 days direct from Japan.

don't take someones word for it. you really need to get down a shop and try them. Any of the "top" knifes will be great, but that doesn't mean the handle/weight/style will be good for you.
personally I hate the handle and feel of globals.
 
Go to a shop and hold them. Some globals are horrid in the hand if yours are bigger than a kids.

About 9 1/2 inch blade.


Buy an asda cheapo and learn to sharpen it correctly. Then spend real cash.


If you can't master sharpening then buy a butter knife ;)
 
To reiterate, go to a good kitchen shop and try a few.

European knives are different to Asian, all-steel or wooden handled makes a difference and the balance of each knife will be different.

I was convinced I wanted a global 20cm until I actually held one.

I ended up walking away with a Wusthof Classic.

Agree in principle. Only problem is that few cookshops will stock things like hattori etc. Of course you will get the usual brands but like I said earlier you can get a lot more for your money if you go for something that isn't heavily marketed (or widely available outside of jdm)
 
That's true, but at least you can find the general style/shape and material you like.
Things like Hatori you have no choice but take a gamble.
