You haven't got any leaking mercury/amalgam fillings have you? That can give a metalic taste, and will make you feel pretty unwell.
It always struck me as amazing that if they found traces of mercury in a river, the river would be said to be polluted. Yet they're quite happy to stick some in your teeth!

There's not any point in you taking samples, as any testing agency will have to take their own (otherwise how can they be sure that the samples were taken without tampering?).

Seeing that you are in flats, have you involved the landlord/freeholder at any stage? Whilst it may be a problem with the water supply, it could also be a problem with the pipework in the building (for which the landlord would be responsible, not the water company).

mercury amalgam doesn't leak and is perfectly safe - you could eat mercury and you would be fine, it just has a bad rep. (and its not free mercury anyway - its trapped as an amalgam)

anyway, back to the op - you could try your local university - they are bound to have an analytical services department and should be able to do all the standard tests - try the chemistry department or the physical sciences faculty.
